The name is derived from a story where when the restaurant first started 60 years ago, it served up to 300 dishes of Kongnamul Gukbap per day because all 300 dishes were usually already sold out in the morning. And since then, people started calling the restaurant Sambaekjip (meaning 300 dishes).
